SkyBeach Resort (6800 Sunshine Skyway Ln S) is about to get dreamier with its new restaurant concept, SouthSeas Tapas. Although the resort debuted just last year, the property has been renovated, renamed, and sold several times over its lifespan. The new restaurant will pay homage to the original 1960s design, The Outrigger Inn—a Polynesian‑themed retreat and dining experience—and blend that “nostalgic charm with a sophisticated nautical experience.”
Inspired by vintage advertisements for The Outrigger Inn, Executive Chef Tom Legg developed the SouthSeas Tapas concept. While the menu is still in development, Chef Legg teases a Bone Marrow Tartar with chili crisps, black garlic, and flat‑iron steak; Hog Fish with peppadew romesco; and Hokkaido Scallops with chorizo broth and forbidden rice ramen, along with a tiki‑inspired cocktail program to round out the nostalgia trip. The 29‑slip marina, with its lolling and rocking boats, will serve as a relaxing backdrop as visitors are transported back to the 1960s.
